Tahini Date Oat Breakfast Cake

Tahini-Date OatBreakfast Cake

Tahini and dates go perfectley together. Whats even better is them in a breakfast oat cake! I accidently made this while thinking how I can transform my favorite pancakes  into something with oats.
The dates make this naturally sweetned but if you do not have dates you can swap it with date molassess or even maple syrup/agave/coconut sugar. But I still reccomend using the dates as a first option.

Also, the toppings options for this is endless! You can top it with rose chocolate yogurt (as seen in the pictures), a tahini caramel, coconut whipped cream, a cashew based cream with orange blossom/rose water/caradomon, or just simply with a drizzle of tahini and sweetner of choice !
Ingredients:
  • 1/3 cup fine oat flour *
  • 1/3 cup ww flour
  • pinch of salt
  • 3/4 tsp baking powder
  • 1/3 tsp baking soda and lemon juice
  • 1 generous tablespoon of date dough / 2-3 large dates / sub for other sweetner if needed
  • 1 generous tablespoon tahini
  • 1 tbsp apple sauce
  • chocolate chips - optional
* you can make this at home by just blending oats until a fine flour like consistency is reached

Steps :
  1. pre heat oven to 355 F
  2. place date dough in a cup with hot water. this is so the dates can breakdown and form a nice thick date liquid. you can speed up this process by also placing the cup in the microwave. then push down dates with spoon to break it down completely (if you like date chunks then feel free to leave some)
  3. mix the baking powder, salt, and the flours together in a bowl
  4. add the date liquid that you made, tahini, and the apple sauce to the dry ingredients. fold the dough.
  5. the batter will most likely be too thick and dry. so take the cup with date residue and pour some water in it. Then keep adding as much water as required to get a slightly thicker version of cake batter. do not make it too liquidy!!!
  6. once done, add the baking soda + lemon mixture into batter and mix well
  7. fold in any add ins or place them in the center of the cake, like chocolate ?
  8. pour batter into an oven safe ramkein and bake in preheated oven for 25 mins (you can adjust this to your liking )
  9. let cool , top it, and enjoy !

Reccomeneded toppings : mentioned above in this article
