These bagels are so simple and quick to make. Plus they are whole wheat ! I mean they are also so fluffy and tasty. 

I have not had bagels in a while, thats when I saw some bagels pop up on my instagram feed and I just had to make some. What I love about these bagels is that you can mix anything in them like blueberries, or even top them with whatever like everything but the bagel seasoning! 
These are obviously not your typical bakery style bagels, but they do the job for when you crave bagels or do not have any on hand ! 

Now you may ask how should I eat these bagels ? Well however you want! Maybe just some plain vegan cream cheese , or cream cheese and zataar/bagel seasoning, hummus + avocado , hummus + tomato + pesto, or nut butter and bananas. Even eat it plain !
ingredients (makes 2 small bagels) : 
  • 1/2 cup whole wheat flour
  • 1/4 tsp baking powder
  • pinch of salt 
  • 1/4 + 1/8 cup coconut yogurt - I used a homemade one 

recipe : 
  1. Preheat oven to 425F
  2. Mix first 3 ingredients in a small bowl well 
  3. Then, add most of the yogurt and mix until a dough forms (it should be thick and not too dry or sticky.) Add the rest of the yogurt + more if needed.
  4. Sprinkle some flour on a surface. Take half of the dough and roll it into a long line. It should not be too thin; maybe about 2-3 cm thick. Also, make syre the ends of the dough are the same size as the middle (so its even throughout) 
  5. Then close the ends to resemble a bagel. It may not stick easily, so keep tapping/pinching it. Do the same with the rest of the batter.
  6. Place the bagels on a pan lined with parchment paper. 
  7. If you would like, top the bagels with whatever you like. For example, everything but the bagel seasoning or zaatar with olive oil. 
  8. Bake the bagels for 20 mins 
  9. One done, let the bagels cool and enjoy !
