Basic FLUFFY Pancakes

WARNING! These pancakes may be consumed in large quantities upon trying them. I know this as I do that every Friday morning. Yes, I keep my fav foods for certain days of the week. Why? Knowing me, I could eat it every day and eventually get bored of it; which I obviously do not want to happen. So that is the story of how pancake mornings became a weekend tradition for me.


Pancakes are the best, and they just got even healthier with this amazing recipe.

Serves 1 :
(double for 2 servings, triple for 3 servings etc..)
Ingridents :
*I do this on a non-stick pan with NO oil. But you can do this with oil if desired!
Reccomended Toppings : I love some chia berry compote w/ some coco yogurt, or some quick and easy dreamy tahini caramel with some bananas, coco yogo with bananas, maple syrup and berries, nut butter and banana, yogurt with candied pecans, matcha yogurt etc..

Ingridents :
- 1/2 cup whole wheat flour (can sub for spelt flour)
- 2 tsp baking powder
- Pinch of salt
- 1 tbsp coconut sugar (can sub for a liquid sweetener - may need to add less liquid)
- Dash of vanilla - optional
- Slightly under 1/2 plant mylk of choice
- 1 tbsp of apple cider vinegar
- Mix the mylk, vinegar, and vanilla and let is sit for 5 mins (it should curdle to become like a buttermylk)
- Mix all the dry ingredients; flour, baking soda, sugar, and salt.
- Once buttermylk is ready, FOLD it into the dry ingredients. The batter should be nice and thick (but not dry.) Do not overmix.
- Let the batter sit for a few minutes. While it is doing so, heat a pan on low-medium heat.*
- Once the pan is ready place the batter in heaping spoonfuls on the pan, do not flatten them! If you do flatten them they will not be fluffy.
- Cover the pan until the dough is mostly dry from the top. Then remove the cover and flip them. Tap the pancakes lighty down to ensure it cooks throughly. Let it cook uncovered until it’s done.
- When done, place the pancakes on cooling rack.
- Repeat steps 5-7 again with the remaining batter
- Let it cool, top it, and then enjoy !
