Easy QuickLentil Salad

- cups cooked lentils
- tbsp lemon juice
- tbsp olive oil
- tsp cumin - feel free to omit
- tsp salt
- tsp black pepper
- Cherry tomatoes (sub for regular tomatoes), Cucumber, Red onion, pomegranate, or any other add-ins - optional
- prepare any add-ins. Dice tomatoes, cucumbers, onions and/or prepare pomegranate seeds
- Get your cooked lentils. I personally like mine with a bit of crunch so I do not cook mine for long. Then I let it sit in the fridge to stay cold. However, you can use freshly cooked lentils.
- Get a small cup and mix all the sauce ingredients; Olive oil, lemon juice, salt, pepper, and cumin.
- Then place the lentils in a mixing bowl, with the add-ins (tomatoes, onions, etc...), and pour the sauce on top
- Mix well! You do not want to have and chunks of the sauce in parts of the salad.
- Put in the fridge for a few hours.
- Serve and enjoy!
