CrispyCurry Chickpeas

I have always wanted to try baked/roasted chickpeas but I never did. That was untill one day I had some chickpeas leftover that I did not want to eat alone. Then I thought, "why not throw some spices and bake them?" And thats exactly what I did!

Once I made these I fell in love. Lets just say I couldn't stop snacking on them once they came out of the oven.. Also I love how you can customize the crunch level of these. The first round I baked them, they were slightly crunchy on the outside and so soft on the inside. The second time the whole think was crunchy, like a chip ! So make sure to adjust baking time to your liking :)
Also I did prefer using my grandmas homemade chickpeas rather than the prepared canned ones. She makes them very nice and soft which helped give that nice crunch layer on the outside and a balance of a little soft but not too soft on the inside. However, if you want a full crunch then either should work, canned or homemade chickpeas.

Ingredients (this recipe is highly customizable, feel free to make less/more and just eyeball it. Thats what I usually do and it works out perfectly) :
* You do not have to make these curry flavoured. Instead sub with some of your other favourite spices!
Steps :
How can I use these chickpeas ? : as a snack alone, on top of salads, on top of a toast (like avocado toast), in a sandwhich, on pizza, etc..
- 2 cups cooked/canned chickpeas [drained]
- 1 1/2 tsp sea salt [more/less to taste]
- 1/4 tsp black pepper [more/less to taste]
- Curry powder* [to taste/enough to lightly coat]
- Olive oil [enough to coat]
* You do not have to make these curry flavoured. Instead sub with some of your other favourite spices!
Steps :
- Pre-heat your oven to 400 degrees F and line the tray you will use w/ parchament paper/reusable baking mat
- Pat dry the chickpeas if wet
- Optional step: remove the skins of some/all the chickpeas
- Place the chickpeas on the prepared pan and add the spices to them and olive oil. Mix the chickpea, the spices, and the olive oil with a spoon, or even better, just use your hands! Mix until evenly coated.
- Once oven is pre-heated, place the tray in the oven and baked for 18-30 mins. The more you bake, the more crispy it will be !
- Optional step : While its baking, every 10 mins I reccomend you move the chickpeas around just to evenly bake them.
- Once chickpeas are done baking to your liking, take the tray out from the oven, and let them cool and enjoy!
