My new favorite protein powder has got to be @botanikablends blueberry pancake protein. It reminds me of the Betty Crocker blueberry pancake mix I’d have as a kid; but sooo much healthier and way better for you! They are based in Australia and I ordered them with my friend to here and I am in love with this. Now I have to share this recipe with you guys!
My problem with baked oats is that they don’t turn out like cake; they tend to be way too gooey. So I finally made a recipe that’s cakey and creamy.

INGREDIENTS:
  • 1/2 cup oats (use more if you want but make sure to increase other ingredients as well)
  • 1 tbsp botanikablends Blueberry Pancake Protein Powder
  • 1 tbsp flax seed meal
  • 1/3 cup of homemade cashew mylk + 1-4 tbsps more (trust me to use a CREAMY mylk - otherwise it won’t be as creamy. Sub this with any other mylk type)
  • 1 tbsp agave/maple (sub for other sweetener of choice. Use less/more as desired. Optional)
  • Pinch of salt
  • 1/2 tsp baking powder
  • Handful of frozen blueberries

RECIPE :
  1. Preheat oven to 350 degrees
  2. Prepare oven safe bowl and mix all the dry ingredients in it : the oats, baking powder, salt, flax seed, protein powder.
  3. Add the mylk and sweetener to dry ingredients. Add the additional mylk as needed. You should have a thick oat “batter”. Not too thick though.
  4. Mix in the blueberries. Then flatten the oats.
  5. Place in the oven for 24-27 mins
  6. Once done, let it cool down then enjoy! ?
